Pakora Dipping Sauce

cups organic white vinegar
¼
cups organic agave

tbsps. organic lime juice
1 ⅓
tbsps. organic sriracha

tbsps. organic wheat-free tamari
¼
cups organic green onion, sliced

tbsps. organic basil, minced
Batter
½
cups organic garbanzo flour
½
tbsps. organic sunflower oil

tsp. organic curry powder
1
tsp. organic baking powder
1
pinch salt
Vegetables
¾
cups organic cauliflower, broken down into small florets
¾
cups organic carrots, sliced 1/2” thick
¾
cups organic yellow onion, sliced 1/2” thick
¾
cups organic broccoli crowns, broken down into small florets
¾
cups organic mushrooms, sliced 1/2” thick
⅓
cups organic green onion, cut into 1” pieces

Preheat oven to 275ºF.

Mix all the dipping sauce ingredients together. Set aside.

In a large bowl, combine the batter ingredients. Add water and mix until the batter is smooth.

Heat 1” of oil in a large, deep pan over medium-high heat.

Dunk the sliced vegetables in the batter to coat and let the excess drip off. Place them in the hot oil and do not crowd.

Cook until golden brown on both sides, turning once, about 2 Minutes per side.

Transfer to paper towels to drain, then place in a baking pan and keep warm in the oven until all the slices are fried.

Serve hot with dipping sauce on the side.
